What strikes you first is how clean and uncluttered the whole operation feels, and that really does sum up this brand in so many ways. They’ve taken away all the fluff and wasted space, and shown exactly what it takes for a restaurant brand to thrive in the modern world – giving customers a brilliant experience without overcomplicating the model behind it.
It’s also a nice way to visualise what your own restaurant might look like one day.

This is where we start to see a little more behind the scenes at how Mitch and his team handle the nitty gritty of operations and have made this business model so streamlined and cost-efficient. While many in the hospitality industry are really struggling right now, Just Pizza & Pasta welcomed more than 5,000 customers through the doors last month, and are enjoying excellent profit margins.
A big part of it comes down to two things: a smart approach to staffing that gets the most out of a lean team without cutting corners, and a menu that’s kept deliberately simple without ever compromising on quality or flavour. It sounds straightforward when you put it like that, but the thought and refinement that’s gone into it is anything but.
