What a wet Tuesday on a small island can teach you about business success

It was a horrible evening here on the Isle of Man not long ago. Blustery, torrential rain – the kind of night where you would expect a restaurant to be half-empty and the team to be twiddling their thumbs and staring at the clock.

We served over 140 guests.

It wasn’t a special event, and we weren’t running any special mid-week promotions. It was just another rainy Tuesday night no different from any other. The only thing different was where we were – Just Pizza & Pasta. A restaurant built to perform no matter the weather.

The thing is, that does not happen because the pizza is good. I mean, the pizza is good, obviously, but that is not why 140 people turned up and went home happy on a miserable night. It happened because of the systems behind the scenes – the documented processes, the trained team who know exactly what their role is when the pressure hits, the kitchen that does not panic when covers stack up, and the floor that moves like clockwork even when the weather is doing its worst outside.

I call it “The JP&P Way,” and I have spent the best part of a decade building it, refining it, and proving that it works, not in an ideal world, but in the real one. It’s not always been easy, and I’ve learnt some hard lessons along the way, but here it is, thriving during the quietest part of the week, in a highly competitive market, on a small island, during a time when everyone is pinching the pennies.

The kind of conditions which can (and do) break other businesses who rely on hope rather than tried and tested structures and systems.

That Tuesday night wasn’t an outlier, either. So far this year, we’ve seen a 20%+ month on month growth, and it’s not even the busy season here yet. Normally we get around 1200 customers a week, but during big tourist events, that gets much higher, with the peak hitting 5,000 in 2 weeks during the TT. People were reading the reviews online in week 1, and then heading in for week 2.

The only reason that number wasn’t even higher is because we were at capacity the whole time. I was even turning people away…. you can imagine how much that stung, but it sure did our reputation a world of good!

So why does any of this matter to you?

When you open your own restaurant in partnership with Just Pizza & Pasta franchise, you’re not starting from scratch. All our expertise and experience is included in the mix to give you an incredible head start.

You get the systems, the processes, the training, the model – everything that took me nearly ten years to figure out – handed to you from day one. You will not need to make the same mistakes I made, because I have already made them and fixed them for you. In fact, I have even created 5 pillars which sum up everything we have achieved:

Strategy. We are completely clear on who we are, what we do, and how we do it. There are no distractions, and absolutely no chips on the menu (that one tends to get a laugh, but I mean it seriously).

Systems. Every part of the operation is documented, repeatable, and designed for flow. Nothing is left to chance or memory.

Standards. We do not hope for good service. We define exactly what good service looks like, we train our team to deliver it, and we hold everyone to it consistently.

Leadership. Calm, decisive, and in control – especially when the pressure hits. A restaurant that falls apart under stress was never truly built to succeed in the first place.

Learning. Every single shift teaches us something. We review, we refine, and we improve constantly, because there is always a better way of doing things.

What those five pillars give you, in practical terms, is consistency when it is busy, control when it matters most, and confidence right across your team. Without that kind of structure, you are relying on effort and hoping it holds together on the nights when everything is against you. With it, you build a restaurant that performs regardless of the weather, the day of the week, or the level of pressure bearing down on the operation.

With Just Pizza & Pasta, you bring the drive, the people skills, and the hunger to build something great, and we give you the framework for success.

If that kind of opportunity interests you – or if you simply want to understand more about what we have built here and whether it could work for you – let’s have a conversation. There is no pressure involved, just a straightforward chat about your options.
